RECIPE: BANANA STRAWBERRY FRITTERS
🍓 These fritters are delicious and super easy to make! They are fruit sweetened making them perfect for baby led weaning and beyond 🍌
INGREDIENTS (makes 3-4 baby fritters)
* 1 ripe banana, medium
* 40g oat flour (whizz rolled oat up in a blender)**
* 2 strawberries, cut in small pieces
* Coconut oil for cooking
**NOTE: add more oat flour if you think the batters it’s too wet (this depends on the size of the banana you use)
HOW TO
1. Mash the banana in a medium bowl.
2. Add oat flour and strawberries then mix gently until well combined.
3. On a non sticky pan, heat a good quantity of coconut oil on medium heat.
4. Once warm, spoon in one or two tablespoon of the batter into the pan and using a spoon to spread out the mixture.
5. Fry fritter for 2-3 minutes per side, until golden brown.
6. Let them cool a little before serving.
7. Enjoy!
